Alambique Serrano Vida Nativa Single Cask #6 Zacua Rum is a cask-strength, single-origin Oaxacan rum from the Krassel family in Santa Maria Tlalixtac, Oaxaca, Mexico, bottled at 54.8% ABV (109.6 proof) in a 700mL bottle, with no water, sugar or coloring added. A single cask of Krassel still rum, it aged 28 months in a Mexican rum cask of American oak and finished 9 months in a jackfruit cask - a finishing wood almost nobody else on earth uses. The Vida Nativa name honors the Zacua, the Montezuma oropendola. Just 237 bottles were filled from the cask. It is available to order online at Del Mesa Liquor.

Finished In A Jackfruit Cask

The Krassel family has distilled sugarcane spirit on the steep hillsides of Santa Maria Tlalixtac, in Oaxaca's Canada region, for three generations - German immigrant Max Krassel began with a handmade still on a coffee farm in the 1930s, and today his grandsons Rommel, Axel and William run the stills. Every Alambique Serrano rum starts with organic Java-varietal cane grown between 2,500 and 3,800 feet, hand-harvested and pressed in mobile mills, fermented with wild yeast, and distilled on the family's custom-built Krassel column and copper pot stills. Nothing is added - no sugar, no coloring, no flavoring - and PM Spirits imports the rums to the United States. Single casks are snapshots - one barrel, one moment, unaveraged - and #6 is the most exotic of the Vida Nativa set: after its American oak rest, the rum finished in a cask made from jackfruit wood, which lays a tropical, almost candied thread over the Krassel still's silky cane character. The Zacua (Psarocolius montezuma) is heard before it is seen - its remarkably loud call rings over the forest canopy around the family's cane fields. Tasting Notes

Cherry cough drop, pipe tobacco and green mango skin on the nose, in the family's unmistakably idiosyncratic style. The palate runs to clay and wet soil, cherries and angostura, finishing with spiced vanilla - earthy and fruity at once.

How to Enjoy

Neat or with a single cube; the jackfruit finish rewards a slow first pour. Compare it with the wine-cask silk of the Vida Nativa blends and Single Cask #7 Arbol de Pipe, listed alongside it in our spirits range.
