The Story Behind Single Cask #20
The Krassel family has distilled sugarcane spirit on the steep hillsides of Santa María Tlalixtac, in Oaxaca's Cañada region, for three generations — German immigrant Max Krassel began with a handmade still on a coffee farm in the 1930s, and today his grandsons Rommel, Axel and William Krassel run the stills. Every Alambique Serrano rum starts with organic Java-varietal cane grown between 2,500 and 3,800 feet, hand-harvested and pressed in mobile mills, fermented with wild yeast, and distilled on the family's custom-built Krassel column and copper pot stills. Nothing is added — no sugar, no coloring, no flavoring. The single casks are unaveraged snapshots — one barrel, one wood, bottled on its own. Cask #20 pairs alembic pot still distillate with new French oak: tighter grain, more tannin and more spice than the ex-bourbon casks, at the highest proof of any single cask in the series.
Tasting Notes
Fresh cane and orange peel on the nose with cinnamon, clove and toasted wood. The palate is dense and oily — dried fruit, honey, black pepper, cocoa and dry oak — with the grassy, savory edge of high-altitude Oaxacan cane underneath and a long, heated finish that a few drops of water turn silky.
