The Story Behind Matadiablo
"Matadiablo" — kill-devil — is what rum itself was called in the 1600s, and the Krassel brothers gave the name to their boldest early blend. The Krassel family has distilled sugarcane spirit on the steep hillsides of Santa María Tlalixtac, in Oaxaca's Cañada region, for three generations — German immigrant Max Krassel began with a handmade still on a coffee farm in the 1930s, and today his grandsons Rommel, Axel and William Krassel run the stills. Every Alambique Serrano rum starts with organic Java-varietal cane grown between 2,500 and 3,800 feet, hand-harvested and pressed in mobile mills, fermented with wild yeast, and distilled on the family's custom-built Krassel column and copper pot stills. Nothing is added — no sugar, no coloring, no flavoring.
Tasting Notes
Ripe tropical fruit and fresh cane on the nose with cinnamon, orange peel and a savory, earthy undertone. The palate is dense and oily — stone fruit, cocoa, black pepper and dry oak spice — finishing long and warm with a menthol lift. A few drops of water open it wide. For a later expression of the same blending program, see Alambique Serrano Blend #10 Rum.
How to Enjoy
Start neat in a small glass and let it breathe; at 63.4% ABV it rewards a slow pour and a splash of water. It is a statement sipper, and a powerful base for a spirit-forward rum cocktail. If French oak is your draw, compare Alambique Serrano Cartier 30 Rum.
