ReBru, the employee-owned microdistillery born from Thorn Brewing, distills exclusively from out-of-code, overstock, and otherwise unsellable local San Diego craft beer, running it through a 1,500-liter German Kothe still under master distiller Neil Lotz (formerly of Desert Distilling). ReBru's founding idea is deliciously subversive: rescue good beer that would otherwise be poured down the drain — 180,000+ gallons diverted from wastewater at launch — and turn it into serious spirits. The gin keeps a juicy fullness from its craft-IPA roots while reading unmistakably as gin: bright juniper, angelica, and coriander with a citrus-forward lift and a peppery, green finish, in a 10-botanical bill of juniper, coriander, and citrus peel.
