The Blanco That Took a Short Rest

Most blancos go straight from the still to the bottle. Herradura — the Amatitan hacienda house founded in 1870 and owned by Brown-Forman since 2007 — gives its Silver what the brand calls an extra-aged blanco treatment: after slow cooking in traditional clay ovens, open-air fermentation with wild yeast and double distillation in a stainless pot still with a copper coil, the spirit rests 45 days in American white oak. That is long enough to pick up a soft straw colour and a whisper of vanilla, and short enough to stay legally and stylistically a blanco.
