The "Breaker of Sorrows" from San Agustín Amatengo

Santa Pedrera — nicknamed "Rompedor de Tristezas," the Breaker of Sorrows — comes from the same traditional palenque as Espíritu Lauro, run by Carino Ramirez in the central valleys of Oaxaca. Espadín plants grow six to seven years before harvest, then roast for days in a conical earthen pit, get crushed by a horse-drawn tahona wheel, and ferment wild with airborne yeasts before two passes through copper pot stills. Nothing is rushed and nothing is added: the result is classic Oaxacan espadín character — rich roast agave, lemongrass, citrus zest and sea salt with a gentle smoky warmth.
