The Navarro family makes its tequila from Tequila Valley agaves grown eight years to peak ripeness, then distills it at NOM 1578 in the town of Tequila. For the Reposado, the blanco spends eight months in American oak — enough time for the wood to soften the agave's edges and add vanilla, nuts, and spice, but not so long that the agave disappears. (An older NOM-1466-era bottling reportedly saw as little as two months in oak; current bottles are the eight-month expression.)
