Mijenta Maestra Selection No. 3 Blanco – An Homage to Tequila's Origins

Some tequilas are made. Others are remembered — crafted with the tools and techniques of tequila's past to bring forth flavors and aromas recalled from its very origins.

Mijenta Maestra Selection No. 3 Blanco is the third limited-edition release in Maestra Tequilera Ana María Romero's annual exploration of agave. Where the first Maestra Selection explored agave cultivation and the second explored terroir, No. 3 takes a broader view of the entire craft — an homage to the tradition and history of tequila itself.

It begins with fully mature 8-year-old Blue Weber agaves de semilla — grown from seed, not offshoots — in Jamay, Jalisco, along the shores of Lake Chapala. Growing agave from seed is extremely rare, and these plants possess a richness and complexity that forms the soul of this expression. They are slow-cooked in an oven built from volcanic stone from Popocatépetl, crushed by a tahona carved from that same stone, fermented in wooden tanks with agave fibers, and distilled in copper pot stills — before resting for 15 days in clay pots, an homage to the ancestral way of making agave spirits.

Bottled at 50% ABV (100 proof) with nothing but agave, water, and yeast, Maestra Selection No. 3 is a tequila that is unmistakably Mijenta and unlike anything in the core range. The bottle itself is a work of art — "Tapestry of Dreams," a bespoke design by Mexico City artist Sophia Castellanos inspired by the vibrant colors and abstract motifs of Otomí embroidery.
