London's Gin Renaissance, Zested

In 2009, three friends — Sam Galsworthy, Fairfax Hall, and Jared — opened London's first traditional copper-pot distillery in nearly 200 years and ignited the city's modern gin renaissance. Sipsmith's creed: "while taking shortcuts might be crafty, doing things properly, that's craft" — every gin is hand-made with no automation. Zesty Orange borrows the technique behind their Lemon Drizzle Gin: all botanicals except the fresh orange peel and bergamot zest are macerated overnight, then each morning the distillers hand-peel fresh oranges and bergamot into the vapor chamber, so maceration and vapor infusion capture different layers of orange.
