Siembra Metl Familia Perez Espadin Mezcal is a high-proof ancestral espadin mezcal from maestro mezcalero Jorge Pérez and his son Miguel, distilled just meters from their home in Río de Parras, Michoacán. Siembra Metl ("Sow, Agave") is the bottler's way of celebrating small ancestral producers: they bottle the tiny productions of family producers, pay them handsomely, and ask them to change nothing. Jorge — a fifth-generation maestro — and Miguel — the sixth — pit-roast 8-year-old espadín agaves for 45 days, mash by hand with oak mallets in eucalyptus "canoas" (dugout canoes), and ferment for 12 days in brick-lined basins with spring water and pulque (an agave honey beer). The mash is double-distilled in Oyamel wood and copper Filipino-style stills common in Michoacán, proofed solely with the heads and tails of the distillation, and harvested under the light of a full moon per regional tradition. Available to order online at Del Mesa Liquor, San Diego, CA.

Five Generations Deep in Michoacán

Michoacán's mezcal tradition runs apart from Oaxaca's: Filipino-style stills, pulque in the fermentation, full-moon agave harvests — and the Pérez family practices all of it without modification. The result is a complex nose of tropical fruit basket and refined smoke; a viscous, palate-coating pour with more tropical fruits and a floral lavender note; and a long, pleasing finish. It is espadín at its most expressive — forget everything cheap ocean of commodity espadín taught you; this is a precious liquid from a family that distills as their ancestors did. Tasting Notes

Nose: complex tropical fruit basket, refined smoke. Palate: viscous and palate-coating — tropical fruits, floral lavender. Finish: long and pleasing.

How to Enjoy

Sip neat at room temperature in a small copita — high proof rewards small pours. Water optional; the full-moon-harvest folklore aside, it needs nothing added.
