Ron Pelacañas Solera Aged Rum
Ron Pelacañas Solera Aged Rum is the inaugural aged release from Hacienda El Carmen: a 95.4-proof (47.7% ABV), 750mL Mexican rum from a four-tier solera, bottled un-watered at batch proof — and it is available to order online at Del Mesa Liquor, San Diego, CA.
Pelacañas is made entirely at Hacienda El Carmen in Ahualulco de Mercado, Jalisco, from 100% estate-grown, fresh-pressed sugarcane juice. It is fermented in open-top vats, double-distilled, and matured in American oak ex-whiskey barrels. This Solera Edition Zero is the first aged bottling: 15 liters drawn from each of 45 barrels of the oldest (2022/23 vintage) rum, blended and bottled without added water. The project is led by Mónica Baeza and her daughters, continuing a hacienda founded in 1573.

What is a solera? A fractional-blending system: mature spirit is drawn from the oldest barrels and each tier is replenished by the next-younger tier, building layered complexity.
