"Barrilito" means little barrel — the family name for the small casks the Fernándezes served guests from at Hacienda Santa Ana, granted by the Spanish crown in 1787. Before aging, a portion of the rum is infused with dried fruits and spices in a house maceration, then it all rests in big ex-Oloroso sherry butts in the Puerto Rican heat, where tropical maturation moves fast. The result is a light-medium bronze rum that opens like bourbon — oaky, woody, faintly sweet — with plums, almonds, apricot and vanilla from the sherry wood.
