Ron Cihuatan Indigo 8 Year Old Rum is a 40% ABV (80 proof), 750mL rum aged eight years in American oak ex-bourbon barrels at Licorera Cihuatan in El Salvador's Cihuatan Valley. Licorera Cihuatan, founded in 2004 as part of the Ingenio La Cabana sugar mill, runs the whole process on site — Salvadoran sugarcane to molasses to column distillation to blending under Master Blender Gabriela Ayala. Indigo is the house homage to Tlaloc, Mayan god of rain, named for the indigo flower: vanilla, cappuccino, dark chocolate, lemongrass, hazelnut and dulce de leche in the glass.
