Ron Cihuatan Cinabrio 12 Year Old Rum is a 40% ABV (80 proof), 750mL rum aged twelve years in American oak ex-bourbon barrels at Licorera Cihuatan in El Salvador's Cihuatan Valley. The distillery — founded in 2004 within the Ingenio La Cabana sugar operation — grows, mills, ferments, column-distills, ages and blends on one site, under Master Blender Gabriela Ayala. Cinabrio, named for the red cinnabar mineral and offered as an homage to Kinich Ahau, Mayan god of the sun, is the deeper pour: plum, ripe starfruit, caramelized orange peel, fresh sugarcane guarapo, pistachio and toasted oak.
