Terroir Select is Ocho's complement to its famous single-estate vintages: instead of one field, it draws from family farms across one of the eight designated Highlands zones — single-region, multi-field, all 100% Blue Weber agave, stone-oven cooked, open-air fermented in wood tanks, double-distilled in copper pot stills, additive-free. The reposado rests in ex-American whiskey barrels in the house style. Among reposados, few can name the farming families behind the agave. Expect rich fruits, vanilla, and butterscotch on the nose, sweet cooked agave with cinnamon and delicate vanilla on the palate, and a long, creamy finish.
