Heather Greene came to whiskey through writing — literally; she wrote the book Whisk(e)y Distilled — and the Unabridged volumes are her answer to both careers: a whiskey told with nothing left out. Volume 2 was unanimously chosen by a ten-person distillery panel, a first for the house. Tennessee barrels bring structure and tannins; Kentucky's malted-rye bourbons add spice; the distillery's own copper-pot Texas spirit adds the high-plains depth. Tasting Notes
Per the distillery: dark cherry, fig, sweet almond, menthol, fine boot leather, anise and caramel candy on the nose; full-bodied and viscous — dark cherry cola, dark brown sugar, sweet black tea, marzipan and oak; a round, smooth, oily finish of fresh bread, licorice and citrus oil.
