The Symphony Series is Mijenta's limited-edition study of what barrel construction does to tequila. Each No. 2 cask — a "Symphony barrel" — is coopered from staves of American oak sourced from four different U.S. forests: Minnesota, Missouri, Pennsylvania, and Virginia. Each region's oak brings its own pore structure, tannins, and aromatics, so a single barrel plays four wood "terroirs" at once. Under Maestra Tequilera Ana Maria Romero, Mijenta — an additive-free, sustainability-led house — let that orchestra work on highland agave spirit for about 8 months, far beyond the 2-month reposado minimum, and bottled it at a generous 90 proof.
The nose is all cooked agave, vanilla, and caramel with ripe banana, opening into citrus peel, fresh herbs, almond, and walnut oil. The palate stays agave-forward — vanilla and banana first, then bittersweet chocolate, mint, almond, cardamom, and clove, with milky coffee and cinnamon-dusted horchata as it develops.
