The Story Behind Insolito

"Insólito" is Spanish for "uncommon" — and this tequila earns the name. It is made in the Sierra del Tigre mountains of Jalisco, at 7,200 feet above sea level, at Premium de Jalisco: the highest-elevation tequila distillery in Mexico (NOM 1558). The Herrera brothers, Octavio and Alberto — generations-deep agave distillers — teamed with the Grammy-nominated country trio Midland to bring this mountain terroir to the wider world. The elevation changes everything: cooler air alters fermentation and distillation, and dramatic day-to-night temperature swings drive a more active spirit-to-barrel exchange than lowland aging allows. The añejo then rests 20 to 24 months in new, virgin American oak toasted to a precise 2.5 char — a bourbon-world technique almost unheard of in añejo tequila — unlocking chocolate, baking spice, and vanilla over a bold agave backbone. Tasting Notes

The nose offers cooked agave, caramel, toasted oak, and vanilla with hints of dried fruit. The palate is rich and layered — chocolate, prunes, butterscotch, toasted nuts, cinnamon, and nutmeg over a bold agave core. The finish is long and warming, with lingering sweet oak and spice. Silky and complex, it is a bourbon drinker's añejo.

How to Enjoy

Drink it neat or over a large cube to appreciate the full 20-plus months of new-oak depth. It also makes a standout Old Fashioned or a tequila Manhattan — the baking-spice character stands up to sweet vermouth beautifully.
