The Story Behind Insolito Blanco
Insolito ("uncommon") is the tequila of the Herrera brothers — Octavio and Alberto, owners of Premium de Jalisco, NOM 1558 — created with the double Grammy-nominated country band Midland. The blanco is where the brand's high-altitude philosophy shows most clearly: at 7,200 feet, everything happens at lower temperatures, and the blanco is rested in tanks for several months before bottling so the highland and lowland agave characters can settle into something crisp, rich-textured, and distinctly terroir-driven. Agave is 100% Weber azul (80% highland, 20% lowland), cooked in low-pressure autoclaves and milled by roller mill, with natural spring water and 100% agave fermentation — no additives at any step.
Tasting Notes
A crisp, clean, agave-forward blanco. The nose opens with cooked agave, bright citrus (grapefruit and lime), fresh cracked pepper, and green herbs. The palate is smooth and creamy-textured — light citrus and herbs over a cooked-agave core, with cracked pepper and a touch of cinnamon — finishing with light lingering heat and a smooth, clean close. A distinctive savory streak (basil, mint, anise notes) separates it from flatter mass-market blancos.
How to Enjoy
Best neat or on the rocks to appreciate the full agave character, and excellent in a classic Margarita or Paloma where its peppery brightness lifts the citrus. Pair with ceviche, grilled seafood, or tacos al pastor. Browse the Insolito brand collection, more tequila, and other fine spirits.
