Estate-grown Blue Weber agave from the iron-rich red soils of Jesús María, cooked 22 hours in stone-and-brick ovens, crushed on a linear tahona, open-air fermented with master distiller Felipe Camarena's proprietary yeast, and twice distilled in copper pot stills with the fragrant heads retained. The ten barrels were filled in January 2016 at 48% ABV and, after six years in the El Pandillo barrel cellar, bottled at 43% — additive-free.
