The barrel program is the other half of the story: new oak that is heavily toasted but only lightly charred — a rare combination in bourbon production — made from staves seasoned in the open air for 24 months, which the distillery says can deliver up to 50% more desirable wood extracts than standard kiln-dried barrels.
