Baseline is made to be a reference point: 100% baking-grade molasses, fermented 2.5 to 3 weeks with Saccharomyces cerevisiae, distilled twice in pot stills and bottled with nothing added but water.

Buckwheat honey, dried mango and pineapple, cinnamon raisin toast, orange zest and coconut on the nose; the palate is creamy and full — dried figs, roasted cinnamon bark, Thompson raisins, cashews and bitter caramel, closing on grapefruit.
