Mijenta Maestra Selection No. 3 is the third annual limited edition from Maestra Tequilera Ana María Romero — and her most ambitious yet. Bottled at 100 proof (50% ABV) in a 750mL bottle, No. 3 is an homage to tequila's origins, made with only agave, water, and yeast.

What makes No. 3 extraordinary is the agave itself: fully mature 8-year-old Blue Weber grown de semilla — from seed, not hijuelos — an extremely rare cultivation, harvested in Jamay, Jalisco by Lake Chapala. The piñas were cooked in an oven built with volcanic stone from Popocatépetl, crushed by a tahona carved from the same volcanic stone, fermented in wooden tanks with agave fibers, distilled in copper pot stills, then stabilized in clay pots for 15 days — an ancestral-style finishing step. Each bottle's artwork, "Tapestry of Dreams," is by Mexico City artist Sophia Castellanos, inspired by Otomí embroidery.

Tasting notes

At a full 100 proof, expect an intense, textured blanco: earthy minerality from the volcanic stone and clay, deep cooked-agave sweetness, wild herb and floral notes from the ambient fermentation, and a long, warm, savory finish. This is blanco as an experience, not a mixer.
