King Floyd's Scorched Pear and Ginger Bitters
King Floyd's Scorched Pear and Ginger Bitters are handcrafted cocktail bitters from King Floyd's Bar Provisions in Novato, California — founded in 2017 by Lawrence Floyd Batterton, who came to bitters after more than twenty years in the herbal extract industry. This is one of the line's most hands-on flavors: Bartlett pears grown locally in West Marin County are sliced and blowtorched to caramelize the fruit before extraction, then combined with organic ginger root and organic gentian root, the classic bittering agent. Each botanical is extracted on its own by maceration or percolation in corn-based neutral grain spirit, stirred and tasted daily, then blended and proofed down with filtered water. Bottled at 45% ABV in a 100mL bottle, the result is sweet and tangy, brimming with caramelized pear and an uplifting kick of ginger. It is available to order online at Del Mesa Liquor.

The Bitters That Start With a Blowtorch
Most fruit bitters start with raw fruit. Scorched Pear and Ginger starts with fire: West Marin Bartlett pears are torched until their sugars caramelize — the brand describes the effect as a caramelized marshmallow depth — and only then extracted, alongside pungent organic ginger and gentian for real bitterness. It is the King Floyd's method at its most theatrical and most effective. Pair it with the bourbons and ryes in our whisky collection, or browse the full spirits range for its other partners.
Tasting Notes
Caramelized pear and warm, pungent ginger lead — sweet and tangy up front, with the ginger's heat building through a gently bitter gentian finish.
How to Enjoy
A few dashes in a bourbon or rye Old Fashioned add fruit and warmth; it brightens a Moscow Mule or a Dark and Stormy, pairs naturally with pear brandy, Calvados and aged rum, and lifts plain sparkling water. Ginger's other great partner lives in our rum collection.
