      What Makes Mezcal Different

Mezcal is tequila's older, wilder relative. While tequila can only be made from blue Weber agave, mezcal can be distilled from dozens of agave species, and its heartland is Oaxaca, Mexico, where producers have roasted agave piñas in earthen pits for centuries. That underground roast — agave cooked over hot stones with wood fire — is where mezcal's signature gentle smoke comes from. Traditional makers then crush the roasted agave, ferment it in open vats and distill in small copper or clay pot stills, often at a single family palenque. The result is a spirit with far more variation than tequila: one bottle might taste of roasted fruit and earth, the next of herbs, minerals and wildflowers, depending on the agave, the village and the hands that made it. Like tequila, mezcal is classed by age — joven (unaged), reposado (briefly rested) and añejo (aged in oak) — but the bigger variable is the agave itself. Wild species such as tobala and tepeztate grow slowly at altitude and yield intense, complex spirits in tiny quantities, which is why single-agave and single-village bottlings have become the collector's corner of the category. Our mezcal collection holds more than 300 bottles, from approachable everyday pours to limited single-village releases.

Choosing a Mezcal: Start With Espadín

Most mezcal is made from espadín, the most widely cultivated agave, and it is the right place to begin. El Silencio Espadín Mezcal is a smooth, cocktail-friendly introduction, while Yola Mezcal 1971 offers a more traditional, estate-grown take on the style. Ready to explore beyond espadín? Bottles from regional specialists like Derrumbes San Luis Potosí Mezcal show how dramatically the spirit changes outside Oaxaca. Barrel-rested expressions such as Ilegal Mezcal Añejo trade some smoke for oak sweetness, and at the top of the shelf, the limited Clase Azul Guerrero Mezcal Joven Limited Edition arrives in one of the most beautiful decanters in the store. If you are coming from the world of tequila, think of mezcal as the same agave family with the volume turned up on terroir — browse the Ilegal Mezcal range for more rested styles.

      Frequently Asked Questions

      Does all mezcal taste smoky?

Most mezcal carries at least a whisper of smoke from the earthen-pit roast, but the intensity varies enormously. Many modern espadín bottlings are soft and fruity with the smoke in the background, while traditional village mezcals lean in much harder. If smoke is not your thing, start with a joven espadín and work your way up.

What is the difference between mezcal and tequila?

Tequila is technically a type of mezcal, restricted to blue Weber agave and mostly produced in Jalisco with industrial ovens. Mezcal allows many agave species, is centered in Oaxaca, and is traditionally pit-roasted and pot-distilled, which gives it a broader and often smokier flavor range.

What is the worm in some mezcal bottles?

The gusano is an agave-worm larva included in some traditional bottles, such as the con gusano classics in this collection. It is a long-standing tradition rather than a quality marker — most premium mezcal today is sold without one, and either style can be excellent.

      How should I drink mezcal?

Neat, at room temperature, in small sips — ideally from a wide-mouthed cup or copita so the aromatics open up. Many drinkers pair it with orange slices and sal de gusano (worm salt) on the side. Aged and espadín mezcals also make superb spirit-forward cocktails, especially stirred drinks.

Can you ship mezcal to my state?

We ship nationwide from our family-owned San Diego store. Orders ship within 1–7 business days, and delivery requires the signature of an adult aged 21 or older.
