Wilderness Trail Barrel Proof Rye Whiskey
Wilderness Trail Barrel Proof Rye Whiskey is a 750mL Kentucky straight rye drawn from a single barrel and bottled at cask strength — uncut, so the proof is whatever that barrel gives, with documented barrels landing between roughly 104 and 112 proof inside a wider 97–120 producer range. The mash bill is 56% rye, 33% corn, 11% malted barley, built on Kentucky-grown Heritage rye and made by sweet mash in Danville, Kentucky. It is available to order online at Del Mesa Liquor.

One Barrel, Full Strength
Most distilleries proof a rye down to a house number; Wilderness Trail's barrel-proof programme bottles the barrel as it comes. The recipe explains the balance: at 56% rye this is deliberately lower-rye than the category's spice bombs, with 33% corn carrying sweetness against the grain — and because founders Shane Baker and Dr Pat Heist enter their spirit at just 100 or 105 proof, among the lowest entry proofs in Kentucky, the gap between barrel entry and bottling strength stays small, so what you taste is close to what the barrel held. Each barrel is its own bottling, and the proof on the label is that barrel's own. See the bonded sibling and the rest of the range on the Wilderness Trail vendor page and in our whisky collection.
Tasting Notes
Per the producer's product sheet for the barrel-proof rye: sweet baking spices over oak and dark fruits on the nose; clove and white pepper on the palate opening into a herbaceous bouquet of candied flowers, spearmint and Earl Grey tea; and a long, floral finish with spearmint sweetness and a warming oak grip. Individual barrels vary — that is the point of the programme.
How to Enjoy
Neat, then with a splash of water to watch a full-strength single barrel open in stages — and it has the proof and spice to anchor a Sazerac that doesn't disappear behind the rinse. More rye and Kentucky whiskey is in our whisky collection and across our spirits collection.
Frequently Asked Questions
What proof is Wilderness Trail Barrel Proof Rye?
It varies by barrel — that is what barrel proof means. Documented single barrels run from about 104 to 112 proof, within a producer range of 97–120 proof; the exact figure for your bottle is printed on its label.
How is this different from Wilderness Trail's Bottled-in-Bond Rye?
Same 56/33/11 sweet-mash recipe family, different bottling: the BIB rye is a small-batch blend bottled at exactly 100 proof, while this is a single barrel bottled uncut at cask strength.
Why is the rye content only 56%?
By design — Wilderness Trail built the recipe for balance rather than maximum spice, using Kentucky-grown Heritage rye and a third corn in the mash to round the grain's pepper with sweetness.
