Wahaka Mezcal Ensamble
Wahaka Mezcal Ensamble is a traditional field-blend mezcal — 40% ABV (80 proof), 750mL, made from Espadin, Madre-Cuishe and Tobala agaves — Wahaka's published recipe is 50% estate Espadin, 25% wild Madre-Cuishe, 25% wild Tobala — grown around San Dionisio Ocotepec, Oaxaca, cooked, fermented and distilled together: milled by tahona, fermented with wild yeast in pine vats and double distilled in copper by maestro mezcalero Alberto 'Beto' Morales. It is available to order online at Del Mesa Liquor.

The Palenque's Own Blend
The ensamble is how a mezcalero bottles his whole farm at once: agaves planted, harvested and worked together, each variety lending what the other lacks — Espadin's generous, earthy sweetness steadied by Madre-Cuishe's dry minerality and lifted by Tobala's florals. At Wahaka, fifth-generation maestro Alberto 'Beto' Morales runs the palenque the traditional way: three to five days roasting in earthen pits over ocote wood, a stone tahona for milling, wild-yeast fermentation in pine vats, and two passes through copper pot stills. Nothing is rushed and nothing is corrected in a tank farm. Compare it with Wahaka's single-varietal bottles in our mezcal selection, browse the tequila and mezcal range, or visit the Wahaka Mezcal vendor page.
Tasting Notes
Nose: Citrus — lime above all — over roasted agave and light smoke. Palate: Full-bodied, earthy and sweet, the citrus carrying through a dry, mineral core. Finish: Dry and lingering, with the fibre-fermented depth traditional mezcal is known for.
How to Enjoy
Neat, in a copita, is the traditional serve — and the best way to taste both agaves. It also builds a superb mezcal Margarita, where the Madre-Cuishe minerality keeps the drink dry.
Frequently Asked Questions
What is a mezcal ensamble? An ensamble is made from more than one agave variety worked together through production — here Espadin with Madre-Cuishe and Tobala — rather than a single-varietal distillation.
Who makes Wahaka mezcal? Maestro mezcalero Alberto 'Beto' Morales, a fifth-generation producer in San Dionisio Ocotepec, Oaxaca, working a traditional palenque with tahona, oak vats and copper stills.
Is Wahaka Ensamble aged? No — it is a joven mezcal, bottled unaged so the two agaves and the traditional process speak for themselves.
