The name comes from the House of the Faun in Pompeii, Italy, where some of the ancient world's most famous mosaics survived under volcanic ash — and from the way this beer is built. Where a mosaic makes a picture from hundreds of small pieces, Pompeii makes an IPA from a single hop: Mosaic, chosen because one variety can carry the whole composition — mango and pineapple up front, dark citrus through the middle, and deep earthy undertones holding the frame.
