Thresh & Winnow Limited Release Sotol Cask Finished Rye Whiskey
Thresh & Winnow Limited Release Sotol Cask Finished Rye Whiskey is a genuinely rare finish: rye whiskey finished in casks that previously held sotol, in this 750mL bottle — and it is available to order online at Del Mesa Liquor, San Diego, CA.
Thresh & Winnow is KOVAL Distillery's ultra-premium sub-brand, launched in September 2024 — Koval itself was founded in 2008 by Robert and Sonat Birnecker in Chicago, Illinois, built on grain-to-bottle organic whiskey. Thresh & Winnow is bottled under Koval's subsidiary Lion's Pride Spirits at the Chicago facility, with a stated focus on craft-level finishing. Sotol is the spirit distilled from the dasylirion (desert spoon) plant of northern Mexico — a cousin of mezcal — and sotol-seasoned casks are almost unheard of as a whiskey finish (the only other recent example was a 2021 WhistlePig rye).
Tasting notes: none are published for this limited finish.
Why buy the Thresh & Winnow Sotol Cask Finish? Because finishes don't get rarer than sotol casks — this is the kind of limited release that exists for the experiment as much as the pour. Browse more rye whiskey, the Koval brand collection, or high-proof whiskey at Del Mesa Liquor.
Serving note: neat to taste the finish on its own terms; add water drop by drop to open it up.
