30% ABV | 750mL | Herbal liqueur | Puebla, Mexico — Siete Rayas Yolixpa is a Mexican herbal liqueur built on aguardiente de piloncillo — a cane-juice spirit — infused with 13 locally sourced herbs and citruses, then rested two to four months in glass. It is made in Apulco and Teziutlán, in the highlands of Puebla, Mexico (4,505 and 6,659 feet of altitude), by maestros destiladores Joaquin Varela and Alberto Hakim. Yolixpa is a traditional Mexican herbal liqueur style, and Siete Rayas makes it the slow way: real botanicals, a piloncillo cane spirit base, and months of glass-resting instead of shortcuts. The result drinks like an amaro with a Mexican accent — bitter, aromatic and honeyed at once. Among herbal liqueurs, it is one of the most distinctive bottles on the shelf.
