The agave is steam-cooked in autoclaves, milled, naturally fermented in open vats and double-distilled, first in stainless steel and then refined in copper pot stills, before resting 6 to 12 months in French oak barrels and being bottled by hand. Working with maestras mezcaleras Elsa Arguelles Sanchez and Erika Aquino Aguilar, the house distills and bottles exclusively in Oaxaca. The Reposado's 6-to-12-month rest in French oak — the top of the reposado band — rounds the Espadin without burying it.
