Rhine Hall is a family-owned Chicago distillery founded in 2012 by father and daughter Charlie Solberg and Jenny Solberg Katzman to bring European eau-de-vie tradition to American fruit. For its Exotic line, the distillery partners with expert distillers in Mexico: the pineapple crowns are chopped and the husk shaved, the fruit is finely puréed and fermented, then distilled in a stainless steel alembic still of the kind traditionally used for mezcal — capturing the full aromatics of the fresh fruit.
