Panama Pacific 5 Year Old Rum is a 750mL Panamanian rum bottled at 42.85% ABV (85.7 proof), aged a minimum of five years: three years in used American oak bourbon casks, then two more years in used Tennessee and Canadian rye whiskey casks that were toasted, not charred. Distilled at Las Cabras, by the Ingenio San Carlos sugar mill in Herrera, Panama, from estate-grown cane made into molasses, it is the entry point to the Panama-Pacific range. Every Panama-Pacific rum follows the same two-stage ageing: a bourbon-cask foundation, then a finishing rest in rye whiskey casks toasted rather than charred, so the wood seasons instead of scorches. Ages are minimums — the youngest rum in the bottle — and the brand works without a solera, caramel colour or artificial flavourings. At five years the 5 Year is the brightest of the three: honeysuckle and orchard fruit where the older expressions turn to butter and wood. Haas Brothers, the San Francisco merchants behind the brand since the range's creation, named it for the 1915 Panama-Pacific International Exposition. Tasting Notes
Per the distillery notes: honeysuckle blooms with soft vanilla and dark caramel on the nose; a sweet-tart palate of caramel Granny Smith apple developing into Asian pear and honeydew melon; a soft, long finish with lingering cedar.
