Kaiyo The Sheri Japanese Mizunara Oak Finish Whisky Third Edition is a 750mL malt whisky bottled at 46% ABV (92 proof), made from 100% malted barley and bottled unchillfiltered. "Sheri" is Kaiyo's sherry-cask expression: the whisky matures in a combination of Oloroso sherry casks, Pedro Ximenez sherry casks and rare Japanese Mizunara oak casks, then — in Kaiyo fashion — takes a final maturation at sea, departing Osaka for up to three months. Sherry Casks, Mizunara Oak and a Voyage at Sea
Kaiyo builds its whiskies around Mizunara — the fragile, fragrant Japanese oak whose handmade casks are among the rarest in the world — and sends its casks to sea for a final maturation, where motion, temperature swings and air pressure work the spirit deeper into the wood. For The Sheri, master blender Jeffrey Karlovitch layered sherry-cask richness over that Mizunara frame; the house calls the result his finest work. Tasting Notes
Per the importer's tasting sheet: a reddish-amber whisky scented with strawberry, sherry, fig, prune and nuts; smooth and luscious on the palate with berries, sandalwood, dark chocolate and leather; finishing on sherry, fig and spice.
