Green Flash Cellar 3 Plum (officially released as Cellar 3: Natura Morta Plum) is the San Diego brewery's love letter to the wild side — a 5.5% ABV Belgian-style saison fermented in oak foudres with Brettanomyces, then aged six months in red wine barrels on Italian plum puree. It pours a pink-blushed gold with tart plum, rosewater and almond over barrel tannins and a dry, wine-like finish. It is available to order online at Del Mesa Liquor.

"Natura Morta": Still Life in a Bottle

"Natura morta" is Italian for still life — the painting genre — and the name fits: this is the brewery most famous for hop-bomb West Coast IPAs painting something delicate. Cellar 3 was Green Flash's dedicated barrel-aging program in Poway, and Natura Morta Plum was its third release, an intentional departure from the hop-forward playbook that reviewers called "the complete opposite" of the Green Flash they knew. Tasting Notes

Nose: Tart plum, rosewater, white wine barrel. Palate: Juicy plum and almond over gentle Brett funk, balanced by barrel-drawn tannin. Finish: Dry, vinous, softly tart.

How to Enjoy

Chill and serve in a stemmed glass beside a cheese board — aged gouda, chèvre, prosciutto — where the beer's acidity plays sommelier. A wild ale this delicate deserves the good glassware.
