The Gin That Tastes Like the Mediterranean
Gin Mare has been the Mediterranean gin since 2010 — the bottle built around four botanicals no other flagship gin leads with: Arbequina olive from Catalonia, rosemary from Greece, thyme from Turkey, and sweet basil from Italy. Each of the eight botanicals is macerated on its own (the citrus rests a full year) and distilled separately in a custom 250-liter Florentine copper alembic housed in the Giro family's former chapel, then blended into the final gin. The result is unmistakably savory-herbaceous: herb and berry-fruit on the nose, a palate of olive, thyme, rosemary, juniper, coriander, citrus zest and cardamom, finishing long on thyme, cardamom and rosemary. Serve it cool at 5–10°C — the definitive bottle for a Spanish-style gin and tonic with plenty of ice and a big garnish.
