Garrison Brothers HoneyDew Bourbon Whiskey
Garrison Brothers HoneyDew Bourbon Whiskey is Texas bourbon kissed with wildflower honey — 40% ABV (80 proof), 750mL, starting life as Garrison Brothers Small Batch Bourbon in Hye, Texas, then rested seven months in stainless steel with cubes of used bourbon-barrel wood saturated in Burleson's Texas Wildflower Honey. The honey arrives by wood, not by the spoonful — floral, smooth and unmistakably Texan. It is available to order online at Del Mesa Liquor.

Honey by Wood, Not by the Spoon
Most honey whiskies stir liquid honey — or honey flavouring — into finished bourbon. Master Distiller Donnis Todd took the slower road: used barrel wood cut into cubes, soaked until saturated with Burleson's Texas Wildflower Honey, then laid into tanks of Small Batch Bourbon for seven months so the whiskey draws the honey out of the wood. The wheated base bourbon, baked by Hye's Hill Country heat for at least three years, comes out softer, rounder and floral. The bottling took Best of Class Platinum at the 2024 SIP Awards. Pour it alongside our bourbon shelves and the wider whisky range, or visit the Garrison Brothers vendor page.
Tasting Notes
Nose: Elderberry syrup, wildflowers and pineapple upside-down cake. Palate: Smooth and light — wildflowers, plum jelly and vanilla over the wheated bourbon's soft grain sweetness. Finish: Stewed apricots and white chocolate with a gentle honey close.
How to Enjoy
Neat or over one large cube — the honey reads best unhurried. It also makes a golden-hour Gold Rush (bourbon, lemon, honey) where the infusion doubles down, or a softer Texas take on the Old Fashioned.
Frequently Asked Questions
How is HoneyDew different from other honey bourbons? The honey is never poured in. Barrel-wood cubes are saturated in Burleson's Texas Wildflower Honey and rested in the finished Small Batch Bourbon for seven months, so the whiskey extracts honey flavour from the wood itself.
What proof is Garrison Brothers HoneyDew? 80 proof (40% ABV) per the distillery — softer than the 94-proof Small Batch it starts as, which is part of its smooth, floral character.
Where is HoneyDew made? In Hye, in the Texas Hill Country, by Garrison Brothers — the first legal bourbon distillery in Texas, working grain-to-glass on site.
