Etramanos Blanco Tequila
ENTREMANOS Blanco Tequila is an unaged, additive-free blanco tequila from Hacienda de Oro (NOM 1522) in Amatitán, Jalisco, Mexico, bottled at 40% ABV (80 proof) — a slow-sipped blanco ("a trago lento") made under Maestro Tequilero Jaime Villalobos Sauza, fifth generation of the Sauza family. It is available to order online at Del Mesa Liquor, San Diego, CA.
The agave — 100% Blue Weber, harvested at 5–7 years — is cooked in an autoclave for 12 hours with a 36–40 hour cool-down, crushed by steel roller mill, and fermented spontaneously in open air in stainless steel with deep well water and wild ambient yeast only: no cultured yeast, no additives. It is double-distilled in stainless steel pot stills with copper heads and bottled unaged, certified "Jay Kosher" per the importer (Skurnik).
Tasting profile (importer notes): dried dark cherries, milk chocolate, toffee, almond, purple flowers and wet clay on the aroma; a savoury palate of black pepper, birch bark, toasted hazelnuts, candied yam and roasted carrots over cooked agave. Serving note: the house tagline is "a trago lento" — sip it slowly and neat; it also rewards premium cocktails that leave the agave in charge.
