Highland Agave, Nothing Else
The Fonseca family has farmed agave for five generations and is one of the largest agave landowners in Jalisco; since the 1980s they have also owned La Tequileña, a distillery that had been producing in the town of Tequila for over 85 years. Their blanco tequila is the house's foundation: estate agave cooked in autoclaves, naturally fermented, distilled in roughly 80% copper pot still and 20% copper double-column still, never filtered through charcoal and never touched by additives.
