Corbin Cash Sour Mash Bourbon Whiskey

Corbin Cash Sour Mash Bourbon Whiskey is a 106 proof (53% ABV) barrel-proof, 750mL bourbon from Corbin Cash Distillery in Atwater, California — a sour mash of 70% corn, 25% rye and 5% malted barley, aged a minimum of 4 years and barreled at a lower entry proof so it can be released at smooth barrel proof. It is available to order online at Del Mesa Liquor, San Diego, CA.

Master distiller David John Souza makes this bourbon on the Souza family farm in the San Joaquin Valley — farmed by five generations of the family, sweet potato producers since 1917 — and named the distillery after his son, Corbin Cash Souza. The sour mash ferments with some spent mash carried into each new batch for complexity, and the high-rye recipe gives a California bourbon built to rival Kentucky's finest.

Tasting profile: a smoky nose of vanilla and oak leading to warm apple and cinnamon, with caramel, vanilla and oak through the palate. Browse the Corbin Cash brand collection, more bourbon whiskey, and the full whiskey collection at Del Mesa Liquor.

Serving note: sip neat or with a splash of water to open the barrel proof; also try the distillery's Corbin Cash Old Fashioned.
