Plata is Clase Azul without the barrel: highland agave slow-cooked for about 72 hours in traditional ovens, fermented with the house's proprietary yeast, and distilled in copper stills, then bottled with no oak at all — the natural color from cooking is filtered out, leaving a bright, crystal-clear spirit with an inherent touch of sweetness. Tasting Notes
