Two Years in the Cava
The brand's name promises an old cellar, and the anejo is where Cava Antigua keeps that promise: after double distillation at La Querencia, the spirit rests a full two years at controlled temperature and humidity in American white oak and French oak the house selects for it. The brand itself dates to 1995, when Gustavo Romero founded it with his son, on a family tequila history the producer traces back five generations and more than 110 years — and the presentation matches the patience, in blown glass finished through 21 hand steps. Find the rest of the range on the Cava Antigua vendor page and in our tequila collection.
Tasting Notes
Per the producer's official notes: golden hues in the glass; a mature aroma led by cooked agave; a palate of hazelnut and dark chocolate; and a sweet finish of lingering vanilla and oak.
How to Enjoy
Neat or over a single cube — two years of oak gives it the depth for an anejo Old Fashioned or a slow after-dinner pour. More anejos are in our tequila collection and across our spirits collection.
Frequently Asked Questions
How long is Cava Antigua Anejo aged?
Twenty-four months in selected American white oak and French oak barrels, per the producer — twice the one-year minimum the anejo class requires.
How is the Anejo different from the Extra Anejo?
Time and intensity: the Anejo rests 24 months where the Extra Anejo rests 60, in the same two-oak programme. The Anejo keeps more cooked agave in the aroma; the Extra Anejo pours thicker, darker and more dessert-like.
