Nocturna is the wild child of the Alma del Jaguar range: where the standard line blends 80% wild yeast with 20% Champagne yeast, Nocturna ferments with 100% wild yeast in open air with agave fibres added, after a 54-hour brick-oven cook and roller-mill crush of first-press free-run juice. It is double-distilled in small copper pot stills with heads-and-hearts focus and cut with 800-foot deep well water — a seasonal, batch-variable profile in which, the brand says, no two batches are ever the same.
