Alma del Jaguar Anejo Tequila is a 40% ABV (80 proof), 750mL añejo tequila from NOM 1414 — the Feliciano Vivanco Distillery in Arandas, Los Altos, Jalisco, Mexico, made from 100% Blue Weber agave, bottled unfiltered by hand and additive-free. The Vivanco family has made tequila for five generations, since 1929; Alma del Jaguar was developed with Sergio Vivanco and master distiller Sergio Cruz. The agave is brick-oven cooked for 54 hours, roller-milled, fermented on an 80% wild / 20% French Champagne yeast blend and double-distilled in small copper pot stills. The añejo is a three-lot blend: 65% double-barrelled in American oak (6.7 months) then French oak (11 months), 18% for 20.7 months in American oak, and 17% for 20.2 months in American oak — caramel and smoke from the French oak, chalk and vanilla from the long American-oak lots.
