Founder David Ravandi built 123 Organic on certified-organic estates in the Tequila Valley, where Blue Weber agaves mature for years before hand harvest. For Uno there is no barrel to hide behind: stone-oven cooking, open-air fermentation, and precise small-batch double distillation carry the agave straight into the bottle, in hand-blown recycled glass with recycled-paper, soy-ink labels. Tasting Notes
The producer describes intense fresh-agave aroma with vibrant lemon peel, black pepper, and mineral character, a silky texture with a slight sweet lift, and a long, clean finish — earthy, citrus, and herbal overall.
