David Ravandi's Organic Amatitan Anejo

123 Tequila was created by David Ravandi — who previously co-founded Casa Noble — around organic and biodynamic farming in Amatitan: the range runs Uno (blanco), Dos (reposado, six months), Tres (this anejo, 18 months), and Diablito (extra anejo). The agave is slow-cooked in stone ovens, fermented in the open air, and double-distilled, and the finished tequila ships in hand-blown recycled-glass bottles with recycled-paper labels printed in soy ink. Browse the rest of the range on the 123 Tequila vendor page and more aged tequilas in our tequila collection.

Tasting Notes

Producer copy describes Tres opening with heady wood and tannin notes that soften in the glass into caramel and chocolate; specialist descriptions add vanilla and oak, dark bitter baker's chocolate and ripe peach on the nose, then white pepper and lemon peel up front over roasted agave and orange marmalade, with a rich, evolving finish.

How to Enjoy

Sip it neat at room temperature in a flute or snifter, the way an anejo this carefully made deserves; a single large cube is fine if you prefer it chilled. It also makes a luxurious Anejo Old Fashioned. More sipping tequilas are in our spirits collection.

Frequently Asked Questions

How long is 123 Organic Tres aged?
Eighteen months in white oak barrels, per the producer — the figure carried unanimously by producer-derived sources. (The 40-month figure sometimes seen nearby belongs to the separate Diablito Extra Anejo.)

Is 123 Tequila really organic?
The producer states the tequila is certified organic by the USDA and the EU, with biodynamic farming practices on its Amatitan estates; the claim is widely corroborated, though the certificates themselves were not inspected in our research.

Where is 123 Organic Tres made?
In Amatitan, Jalisco, in the Tequila Valley (the Lowlands) — not the Highlands, despite occasional retailer mislabelling.
