Dixeebe Pechuga Mezcal — a 100.2 proof (50.1% ABV), 375mL pechuga from Valentin Cortes in Santiago Matatlan, Oaxaca. Once a year, Cortes produces a very small batch of this ceremonial style: Espadin ordinario goes back into the still with bananas, guava, pineapple, oranges, apple, prunes, and turkey meat hung in the still, so the vapors pass through fruit and protein during the second distillation. Available to order online at Del Mesa Liquor in San Diego, CA.

Pechuga ("breast") is mezcal's most festive tradition, historically made for celebrations. The Dixeebe version layers tropical fruit and savory depth over Espadin's clean agave base — bottled around 50% ABV in the 375mL format. Production is minuscule and annual; when it's gone, it's gone until next year.
