The Vodka a Farm Built

Corbin Cash's distilling story begins with vodka: since 2010 the Souza family has been turning their own sweet potatoes into spirits on their fourth-generation farm — reportedly the first sweet potato vodka at its launch. Ten pounds of sweet potatoes go into every bottle: cured for 12 to 16 months after harvest, fermented for five days, then distilled in a Holstein copper pot/column hybrid still up to 190 proof before slow carbon filtration and bottling at 80 proof. Founder David Souza describes an earthy, nutty spirit with almond undertones and a silky texture — "no bite," he says, "almost like wine." Independent reviewer Drinkhacker scored it A− (9.0/10), finding a creamy palate of brown sugar, baking spice, and citrus with a long, warming, sweet finish. Tasting Notes

The distillery promises a creamy mouthfeel and medium body with nutty caramel undertones and a hint of sweetness on a smooth finish. Souza himself adds earthy, nutty character with almond undertones and a silky, bite-free texture. Drinkhacker's independent take: a neutral nose with brown butter and gooseberry hints, a creamy palate of brown sugar and baking spice with citrus lift, and a long, warming, sweet finish.

How to Enjoy

Chilled and neat, or over a single cube — this vodka has enough character to stand alone. Its creamy body makes an exceptional vodka martini or a Moscow mule; try it in any cocktail where a neutral vodka would disappear but character is welcome. Pair with caviar, smoked salmon, or oysters.

Frequently Asked Questions

Is Corbin Cash vodka really made from sweet potatoes?
Yes — 100% estate-grown California sweet potatoes, about ten pounds per bottle, distilled on the Souza family's Atwater, California farm.

Is it gluten free?
Yes. It is distilled from sweet potatoes, not grain, and is gluten free.

How is it distilled?
Fermented five days, distilled in a Holstein copper pot/column hybrid still to 190 proof, then slowly carbon-filtered and bottled at 40% ABV.

Is it really the world's first sweet potato vodka?
That claim was reported in trade press at its 2015 launch, but it has not been independently adjudicated — treat it as launch-era press, not settled fact.
