Wattie Boone & Sons honors Wattie Boone — the first documented bourbon producer in Kentucky — and the whiskey is made the slow way: an undisclosed wheated mash bill from local grains, sweet-mash fermented three to five days in 1,000-gallon stainless fermenters, double pot-distilled, barreled at 105 proof entry, aged under a proprietary heavy-toast/low-char regimen, then proofed with estate limestone-aquifer water and blended in micro-batches of one to three barrels.
