It meets the Bottled-in-Bond Act of 1897 to the letter — one distillery, one distilling season, a minimum of four years in a federally bonded warehouse, bottled at exactly 100 proof. The mash bill is high-rye and unusual: 64% non-GMO yellow corn and 36% rye — no malted barley — fermented with three unique yeast strains from Colorado corn and Idaho rye. Among bourbons at this proof, the result drinks sweeter and fruitier than the rye percentage suggests: Honeycrisp apple, zested kumquat, golden raisins and malted milk chocolate on the nose; peach and cherry cobbler, gingersnaps, puffed wheat cereal and roasted marshmallows on the palate; a long almond-financier finish with brown butter and warm oak. A limited release in the core range.
